The iconic Volare Italian restaurant in Southport has just landed the biggest ever halibut in its history!
The huge 153 kilo fish – equivalent to 24 stone – took five members of staff to carry into the kitchen of the family-run venue on Lord Street in Southport town centre.
The team have already filleted it and put it onto the menu for delighted diners to savour.
Volare is one of Southport’s most established restaurants, famous for its home-cooked Italian dishes – and the high quality of its seafood.
They have recently announced a partnership with Southport Football Club, where they provide hospitality on matchdays.
Volare was opened in 2007 by Onofrio Maimone and his wife Cinzia Lopalco, with son Jason Maimone operating as Head Chef.
Onofrio Maimone said: “We are famous for our fresh fish at Volare! When our customers see it on our specials board at our restaurant, they know how good it is.
“I grew up and spent my first 25 years in Sicily, beautiful fresh seafood is something I grew up with.
“Since we opened Volare 18 years ago, this is the biggest halibut we have ever had!
“It weighs 153 kilos and was landed in the waters off Iceland on Monday.
“I bought it through Neve fishmonger at Fleetwood Market for £2,500.
“It took five of us to carry it into the kitchen, where our team of chefs have already filleted it.
“It will create around 500 to 600 delicious halibut steaks, which we will serve simply grilled with some olive oil dressing and maybe some garlic or lemon juice.
“I love seafood, and halibut is one of my favourite things to eat.
“Halibut is a flat fish, it’s an oily fish that is very rich and tasty and packed full of flavour – it is delicious.
“As well as halibut steaks, we will also be able to make fish soup, and fish stock with this huge fish.
“Volare is going to be busy this weekend! Our customers will have a real treat when they come in.
“We are always looking out for things that are new, fresh and exciting to add to what we already have on our extensive menu.”
Volare is situated 613-619 Lord Street in the ‘Northern Quarter’ of Southport town centre.
