A Southport mum who was furloughed from her job when the Covid-19 pandemic struck in March has risen to the challenge by becoming an in-demand baker.

Lauren Wickham. 26, was working as a beauty therapist until March.

She has since set up her own company, The Cake Box, and is so busy she is fully booked until mid-January and is now looking to rent new premises in Southport.

Lauren, who has a seven-year-old daughter, said: “After being furloughed from my job as a beauty therapist in March I decided I needed something to keep me busy and earn a little extra money.

“I started to do the Southport Market Trail once a month with a little table outside my house selling my home-made cupcakes and cakes. It was really popular and orders started to come in.

“Now after six months of being up and running I’m fully booked every day until mid-January and looking for a property in Southport to rent to set up my own bakery.”

Lauren is originally from Manchester but moved to Southport with her parents over eight years ago. Her grandparents lived in Birkdale.

At the moment she is very busy preparing her eye-catching Christmas Eve Boxes, which include Christmas Cupcakes, Christmas Cake Pops and Christmas Cookies.

She said: “I have been baking since I was little and take great inspiration from my Mum and Grandma.

“They taught me a lot about baking and ingredients which I have built on myself over the years.

“Recently I have taken online courses to better myself and I hope to get bigger and better as the years go on.”
