Sushi Fusion

A food business which has a growing reputation for creating top quality sushi with new and exciting flavours is opening a new pop-up restaurant in Southport town centre. 

Sushi Fusion produces fresh, delicious sushi, which is made to order. 

The business was launched by friends Mark Sloan and Russell Lamb during the Covid pandemic, delivering affordable restaurant quality food to people’s homes. 

The venture proved to be such a huge success that they soon opened a restaurant inside Mere Brow Village Hall in West Lancashire, allowing customers the option of either visiting to enjoy a meal out, or continuing to order from home. 

Now they are bringing Sushi Fusion to Enelle’s Glass House in Southport town centre, on Bank Passage, just off Lord Street, with two special ‘Singing Sushi’ nights. 

Bookings are now being taken for the evenings, which will take place on the top floor of the venue on Friday, 19th November and Friday, 26th November. Tables will be available between 5pm and 9.30pm. 

The evenings will have a real Japanese flavour to them, with guests then able to enjoy karaoke from 7pm, with the bar open until late.

The friends have created a very modern version of sushi, which does not include any raw fish options. 

They are happy to tweak orders depending on any allergies or dietary requirements. 

Mark Sloan said: “We started out during lockdown and it has really taken off. 

“When we began Sushi Fusion, we weren’t sure what the reaction would be. Our friends and family really liked it, and then word spread. Lots of other people began telling us they really liked it too, and we now deliver as far as Hesketh Bank and Tarleton to Birkdale, through Southport Eats and Just Eat.  

“Then we decided to expand into Mere Brow Village Hall, which has gone really well too. 

“We now have a team of staff, with four chefs, and two drivers. 

“We have lots of orders from customers in Southport so we are really excited to be bringing Sushi Fusion to Southport town centre, at Enelle’s Glasshouse. 

“Going back to The Glasshouse is very nostalgic for us. When we were in our 20s, everyone went there for nights out! 

“We are going to start with these two pop-up evenings, but if the reaction is positive then we may look at doing something full-time.

“Being in the town centre will give more people in Southport the opportunity to try our food. 

“We like to take everyone’s favourite flavours and put them into a sushi roll. 

“We have created new variations such as fish and chips sushi, katsu chicken curry sushi, sausage and cheddar sushi wrapped in bacon, the cheeseburger roll, Indian spiced halloumi. 

“We like to take everyone’s favourite flavours and put them inside a sushi roll bringing the experience of sushi to people who wouldn’t normally want to try it.

“We now have our Christmas menu available, which is on our Sushi Fusion Facebook page

“We don’t just do sushi, we have a great grill and bar menu which we offer at Mere Brow Village Hall in the Runner Plat Bar. This is available alongside our sushi menu five days a week.

“We are open Wednesday to Sunday each week between 12 noon and 9pm, closing at 8pm on Sundays.

“The reaction has been brilliant, we are really looking forward to bringing our food to Enelle’s Glasshouse.”
